Ingredients

  • 100 g vegan butter or margarine (Cold and cut into small pieces)
  • 60 ml cold water (Add gradually as needed to form the dough)

  • 180 ml vegetable stock (For rehydrating the textured vegetable protein)
  • 200 g potato (Peeled and diced)
  • 1 onion (Finely diced; approximately 110 g edible portion)
  • 1 carrot (Finely diced; approximately 60 g edible portion)
  • 1 celery stalk (Finely diced; approximately 40 g edible portion)
  • 2 cloves garlic (Minced)
  • 75 g frozen peas (Thawed if necessary)
  • 2 tbsp vegetable oil (For sautéing)
  • 1 tsp ground cumin (For the filling)
  • 1 tsp smoked paprika (For the filling)
  • 0.5 tsp dried oregano (For the filling)
  • black pepper (To taste)
  • salt (To taste, for the filling)

Steps

    Make the dough. Combine the flour and salt in a mixing bowl. Rub in the cold vegan butter with your fingertips until the mixture resembles coarse crumbs.
