Crispy Rice Paper Shrimp Dumplings

Ingredients
- 350 g shrimp (raw, peeled and deveined)
- 6 rice paper (sheets)
- 1 green onions (bunch, finely chopped)
- 1 garlic (clove, minced)
- 5 g ginger (grated or finely minced)
- salt (to taste)
- pepper (to taste)
- 1 tbsp soy sauce

In a mixing bowl, combine the shrimp, chopped green onions, minced garlic, ginger, salt, pepper, and soy sauce. Mix thoroughly until the shrimp is well-coated with the aromatics and seasonings.

Prepare a shallow dish of warm water. Dip one sheet of rice paper into the water for a few seconds until pliable, then lay it flat on a clean work surface.

Spread the shrimp mixture evenly over the wet rice paper.

Dip a second sheet of rice paper in the water and place it directly on top of the shrimp layer.

Using a knife or kitchen shears, cut the stacked rice paper and shrimp into 4 equal quadrants.

Wrap the edges of the rice paper around the shrimp filling for each quadrant to create individual dumpling parcels. Repeat with the remaining sheets and filling.

Place the dumplings in the air fryer basket, ensuring they are not touching to prevent sticking.

Air fry at 400°F (200°C) for 8 minutes until the rice paper is crispy and the shrimp is fully cooked.
Notes
The recipe makes 12 dumplings total (6 per serving). The author notes that 4 dumplings contain over 20g of protein. Be careful not to over-soak the rice paper or it may become too fragile to wrap.
