Creamy Green Pea Soup with Spiced Oil
A simple, creamy green pea soup made with potatoes, peas, onion, garlic, and fresh dill. It is finished with fragrant paprika-chilli oil and served with fresh lemon slices.

Ingredients
- 3 tbsp olive oil (For sautéing the vegetables)
- 1 large onion (Roughly chopped)
- 3 garlic cloves (Chopped)
- 2 large potatoes (Roughly chopped)
- 200 g green peas (Fresh or uncooked frozen peas work best)
- hot water (Add enough to cover the vegetables; estimated 750 ml)
- 1 chicken stock cube
- salt (To taste)
- fresh dill (Chopped; estimated 15 g)
- olive oil (For the spiced oil topping; use as desired, estimated 2 tbsp)
- paprika powder (For the spiced oil; use as desired, estimated 1 tsp)
- red chilli powder (For the spiced oil; use as desired, estimated 1/4 tsp)
- black pepper (For the spiced oil; use as desired, estimated 1/4 tsp)
- lemon slices (For serving; amount as desired)

Heat the 3 tablespoons of olive oil in a large pot over medium heat.

Add the chopped onion and garlic. Sauté for several minutes, stirring occasionally, until the onion is softened and the garlic is fragrant, taking care not to brown the garlic heavily.

Add the roughly chopped potatoes to the pot.

Add the green peas, then pour in enough hot water to cover the vegetables.

Cover the pot with a lid and cook over medium heat until the potatoes and peas are completely soft, about 20–25 minutes. The potatoes should be easily pierced with a fork.

Remove the lid and add the chicken stock cube and salt to taste. Stir until the stock cube dissolves.

Using a hand blender, blend the soup directly in the pot until smooth and creamy. Work carefully to avoid splashing the hot soup.

Add the chopped fresh dill and stir well to distribute it throughout the soup.

For the topping, heat some olive oil in a separate small pan over medium-low heat.

Add the paprika, red chilli powder, and black pepper to the hot oil. Stir briefly, just until the spices are fragrant; do not let them burn.

Ladle the blended soup into bowls and pour the spiced oil over the top.

Serve immediately with fresh lemon slices.
Notes
The recipe does not specify an exact amount of water, dill, topping oil, or spices; adjust these to taste and consistency. Blend carefully because the soup is hot. The soup can be made ahead and gently reheated, adding a little water if it thickens.
