Ingredients
- 4 large stalks kale (Stems removed)
- 0.5 head green cabbage
- 2 small Fresno peppers (Sliced)
- 1 cup peanuts (Chopped)
- 0.5 cup cilantro (Chopped)
- 0.5 cup green onions (Chopped)
- 0.5 cup roasted peanut oil
- 2 tbsp rice vinegar
- 1 clove garlic
- 2.5 tbsp sugar
- 1 tsp coarse kosher salt (More to taste)
- black pepper (Freshly ground, to taste)
Steps
- 1
Make the roasted peanut vinaigrette. Blend the roasted peanut oil, rice vinegar, garlic, sugar, kosher salt, and freshly ground black pepper in a small blender or food processor until smooth. Alternatively, grate the garlic into a jar with the other dressing ingredients and shake thoroughly to combine.
- 2
Chop the cilantro, green onions, peanuts, and Fresno peppers. Keep the chopped peanuts and peppers ready for finishing the salad.
- 3
Cut the kale and cabbage into chunks. Using a food processor, pulse them in batches until very finely chopped, stopping before the greens become mushy. If they release too much water, gently squeeze them with a paper towel, then transfer them to a large bowl.
- 4
Toss the chopped kale and cabbage with some of the dressing. Massage the greens with your hands for about 1 minute, until the kale is tender.
- 5
Add the chopped cilantro, green onions, peanuts, and Fresno peppers, followed by the remaining dressing. Toss thoroughly to combine and serve.
Notes
For meal prep, store the kale, cabbage, and herbs together in one refrigerated container; store sliced peppers separately in the refrigerator, the dressing refrigerated, and chopped peanuts at room temperature. Assemble when ready to eat. Once fully dressed, the salad keeps well in the refrigerator for 4–6 hours. Avocado oil can replace the roasted peanut oil, although the peanut flavor will be substantially less pronounced. A food processor's circular attachment may help prevent the greens from becoming mushy.
