Weights are estimates. Together, the ingredients weigh about 840 g before cooking, which is about 210 g per serving.
Steps
In a large bowl, whisk together the sweetened condensed milk, instant espresso powder, vanilla extract, and salt until the espresso powder is fully dissolved and the mixture is smooth.
In a separate chilled bowl or using a stand mixer, whip the well-chilled evaporated milk until it is light and airy. Be careful not to whip it until it holds stiff peaks; it should be thickened but still somewhat fluid to prevent the base from deflating later.
Gently fold the whipped evaporated milk into the coffee-condensed milk mixture until just combined.
Pour the mixture into a shallow, freezer-safe container or a rimmed baking sheet lined with plastic wrap. Freeze until completely solid, at least 6 hours.
Once fully frozen, break the mixture into chunks and place them in a food processor. Process until the mixture is smooth and creamy, resembling the texture of soft-serve ice cream.
Working quickly, add the finely chopped chocolate to the food processor and pulse just a few times to distribute the bits evenly without melting the ice cream.
Transfer the ice cream back to a chilled container and freeze for another 30 minutes to 1 hour to firm up before serving.
Notes
Ensure the evaporated milk is very cold before whipping, or it will not aerate properly. The base must be fully frozen before processing to prevent separation. Chop the chocolate finely as large pieces become very hard when frozen.
