Lazy Hot Honey Chicken Sandwich

- 2 Chicken breasts (cut into cutlets)
- 0.5 cup All-purpose flour (for dredging)
- 2 Eggs (beaten)
- 1 cup Panko breadcrumbs (for coating)
- 0.25 cup Vegetable oil (for shallow frying)
- 2 tbsp Unsalted butter (softened)
- 1 tbsp Buffalo sauce (plus more for hot honey oil)
- 1 clove Garlic (minced)
- 1 tbsp Mayonnaise
- 1 tbsp Fresh chives (finely chopped)
- 2 tbsp Honey (for hot honey drizzle)
- 1 loaf Focaccia bread (sliced in half horizontally)
- 0.25 cup Parmesan cheese (grated)
- 2 tbsp Greek yogurt (for salad dressing)
- 1 tsp Lemon juice
- 1 tbsp Fresh dill (chopped)
- 2 cups Mixed greens (lettuce and rocket (arugula))

Prepare the chicken by coating the breasts first in flour, then dipping in beaten egg, and finally coating thoroughly with panko breadcrumbs.

Heat oil in a pan and fry the chicken cutlets for a few minutes on each side until they are golden brown and crispy.

In a small bowl, combine the softened butter, buffalo sauce, minced garlic, mayonnaise, and chopped chives to create the sandwich spread.

Prepare the salad dressing by combining yogurt, lemon juice, and fresh dill in a bowl.

Toss the mixed lettuce and rocket with the yogurt-dill dressing until lightly coated.

Prepare the hot honey drizzle by mixing honey with a bit of buffalo sauce or chili oil.
