Ingredients
- 1 cup Semi-sweet chocolate chips (good quality)
- 0.5 cup Heavy cream
- 1 cup Unsalted butter (softened to room temperature)
- 2 cup Powdered sugar (sifted)
- 0.25 cup Cocoa powder (unsweetened)
- 1 tsp Vanilla extract
- Salt (pinch)
Steps
- 1
Place the chocolate chips in a small heat-proof bowl.
- 2
Heat the heavy cream in a small saucepan over medium heat until it just begins to simmer, or heat in the microwave for about 45-60 seconds.
- 3
Pour the hot cream over the chocolate chips and let sit for 5 minutes without stirring.
- 4
Whisk the chocolate and cream together until completely smooth and glossy to create a ganache. Set aside to cool to room temperature.
- 5
In a stand mixer fitted with the paddle attachment, beat the softened butter on medium-high speed until light and fluffy, about 3-5 minutes.
- 6
Reduce the mixer speed to low and gradually add the powdered sugar and cocoa powder until incorporated.
- 7
Add the vanilla extract and a pinch of salt, then increase the speed to medium and beat until well combined.
- 8
With the mixer on low, slowly pour in the cooled chocolate ganache.
- 9
Increase the speed to medium-high and whip the mixture for another 2-3 minutes until the frosting is light, airy, and holds its shape.
Notes
This frosting is excellent for 'spackling' cakes to create a perfectly smooth surface before applying fondant or final decorative layers. If the mixture is too soft, chill it in the refrigerator for 10-15 minutes and whip again.
