Ingredients
- 2 chicken breasts (large, butterflied or sliced to create a pocket)
- 2 cup fresh spinach (chopped and sautéed or wilted)
- 4 oz cream cheese (softened)
- 0.5 cup mozzarella cheese (shredded)
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- salt (to taste)
- black pepper (to taste)
- 2 tbsp olive oil (for searing)

Prepare the chicken breasts by slicing a pocket into the thickest part of each breast, being careful not to cut all the way through. Season the outside and inside of the chicken with salt, pepper, garlic powder, onion powder, and paprika.

In a medium bowl, combine the softened cream cheese, shredded mozzarella, and chopped spinach. Mix until well combined.

Stuff each chicken breast pocket generously with the spinach and cheese mixture. Secure the edges with toothpicks if necessary to keep the filling inside.

Heat olive oil in a large oven-safe skillet over medium-high heat.

Place the chicken breasts in the skillet and sear for 5-7 minutes per side until the exterior is deep golden brown and crispy.

If the chicken is thick, transfer the skillet to a preheated oven at 375°F (190°C) for an additional 10 minutes, or until the internal temperature reaches 165°F (74°C).

Remove from heat and let the chicken rest for 5 minutes before serving to ensure the juices redistribute.
Notes
For a keto-friendly version, ensure your cream cheese has no added sugars. You can also add red pepper flakes to the filling for a bit of heat.
