- 2 Apples (peeled and diced (about 2 cups))
- 1.5 cup All-purpose flour (180g)
- 0.75 cup Granulated sugar (150g)
- 1.5 tsp Baking powder
- 1 tsp Cinnamon
- 0.5 tsp Salt
- 0.5 cup Neutral oil (or melted butter)
- 2 Eggs (large)
- 1 tsp Vanilla extract
- 2 tbsp Cinnamon sugar (for topping)
- 0.5 cup Mascarpone cheese (room temperature)
- 2 tbsp Brown butter (cooled)
- 1 tbsp Honey

Preheat your oven to 350°F (175°C) and grease an 8x8 inch baking pan.

In a large mixing bowl, whisk together the eggs, oil (or melted butter), sugar, and vanilla extract until well combined.

Add the flour, baking powder, cinnamon, and salt to the wet ingredients. Mix until just combined, being careful not to overmix.

Notes
