Healthy Chicken Nuggets (Guilt-Free)

Ingredients
- 400 g Chicken breast (minced or ground)
- 1 Free-range egg
- 1 tbsp Cornstarch (for texture)
- Salt (to taste)
- Black pepper (to taste)
- 2 cup Corn flakes (sugar-free, crushed for breading)
- 1 tbsp Extra virgin olive oil (for cooking)

Finely mince the chicken breast or use pre-ground chicken meat.

In a bowl, mix the chicken meat with the cornstarch, salt, and pepper until a homogeneous mixture is obtained.

Form small portions with your hands, giving them the characteristic nugget shape.

Whisk the free-range egg in a shallow dish.

Crush the corn flakes (sugar-free) until they are in small pieces but not a complete powder to maintain the crunch.

Dip each nugget first into the whisked egg and then into the crushed corn flakes, pressing lightly so they adhere well.

Cook in a skillet with a little olive oil, in an air fryer, or in the oven until golden brown and the chicken is thoroughly cooked inside.
Notes
For an even lighter version, they can be cooked in the air fryer at 200°C for about 8-10 minutes. Comments suggest that textured soy can also be used for the breading.
