Ingredients

  • 0.75 cup cocoa powder
  • 0.5 cup all-purpose flour
  • 0.25 tsp salt
  • 5 eggs (large)
  • 1.75 cups granulated sugar
  • 1 tsp vanilla extract
  • 2 sticks salted butter (melted)
  • ice cream (for serving)

Steps

  1. 1

Preheat your oven to 325°F (165°C). Grease a 2-quart baking dish with butter or non-stick spray.

  2. 2

In a medium bowl, whisk together the cocoa powder, flour, and salt until well combined.

  3. 3

In a stand mixer fitted with a paddle attachment, combine the 5 eggs and 1 3/4 cups of sugar.

  4. 4

Beat the egg and sugar mixture for 5 to 7 minutes until it becomes thick, pale, and light yellow. Do not skimp on this time, as it is essential for the final texture.

  5. 5

Add the vanilla extract to the egg mixture, then gently mix in the dry ingredients on low speed until just combined.

  6. 6

Carefully stir in the melted salted butter until just combined.

  7. 7

Pour the batter into the prepared 2-quart baking dish.

  8. 8

Place the baking dish inside a larger roasting pan. Pour hot water into the larger pan until it reaches halfway up the sides of the brownie dish to create a water bath (bain-marie).

  9. 9

Bake for 60 minutes. The top should be set and crackly, but the center will remain gooey and have a slight jiggle.

  10. 10

Remove from the oven and let cool for 10 to 20 minutes.

  11. 11

Serve warm, topped with a scoop of ice cream.

Notes

The water bath is critical for creating the pudding layer; without it, the dish will bake into standard brownies. Ensure you beat the eggs and sugar for the full 5-7 minutes to achieve the correct aeration and texture.
