Lemon Garlic Grilled Chicken Breast

Ingredients
- 4 Chicken breast (boneless and skinless)
- 0.25 cup Olive oil
- 0.25 cup Lemon juice (freshly squeezed)
- 4 cloves Garlic (minced)
- 1 tsp Dried oregano
- 1 tsp Salt
- 0.5 tsp Black pepper
- 2 tbsp Fresh parsley (chopped)

In a small bowl or measuring cup, whisk together the olive oil, lemon juice, minced garlic, oregano, salt, and black pepper until emulsified.

Place the chicken breasts in a resealable plastic bag (like a Ziploc) or a shallow dish.

Pour the marinade over the chicken, ensuring all pieces are well coated. Seal the bag and refrigerate for at least 30 minutes (or up to 4 hours).

Preheat the grill or a grill pan over medium-high heat.

Remove the chicken from the marinade and discard the remaining liquid.

Grill the chicken for about 5 to 7 minutes per side, or until the internal temperature reaches 74°C (165°F) and the exterior is nicely browned.

Remove the chicken from the grill and let it rest for 5 minutes before slicing.

Sprinkle with fresh chopped parsley before serving.
Notes
For even more tender chicken, you can lightly pound the chicken breasts with a meat mallet to even out the thickness before marinating. Do not marinate for longer than 4 hours, as the lemon acid can start to 'cook' the meat and change the texture.
