Ingredients
- 0.5 cup salted butter (softened)
- 4 garlic (minced)
- 1 tbsp fresh flat-leaf parsley (chopped)
- 1 tbsp fresh chives (chopped)
- 2 tsp Dijon mustard
- 1 tsp lemon zest
- 1 tsp smoked paprika
- 0.5 tsp lemon juice
- 0.5 tsp fresh thyme (chopped)
- 0.25 tsp chili powder
- 0.25 tsp crushed red pepper
- 1 lb skinless, boneless chicken breasts or thighs
- 1 tbsp olive oil
- 0.5 tsp salt
- 0.5 tsp ground black pepper

For cowboy butter, stir together softened butter, minced garlic, parsley, chives, Dijon mustard, lemon zest, smoked paprika, lemon juice, thyme, chili powder, and crushed red pepper in a medium bowl until well combined.

Wrap the butter mixture in plastic wrap and chill in the refrigerator for 2 hours, or until ready to use.

Cut the chicken into bite-size pieces.

In a medium bowl, toss the chicken pieces with olive oil, salt, and pepper to coat evenly.

Thread the chicken onto eight 6-inch skewers, leaving about 1/4-inch of space between the pieces to ensure even cooking.

To grill: Place skewers on the oiled rack of an outdoor grill directly over medium heat. Cover and grill until chicken is no longer pink and reaches an internal temperature of 165°F (74°C), about 8 to 10 minutes, turning once halfway through.

To air fry: Preheat an air fryer to 400°F (200°C). Place skewers in the air fryer basket and cook until no longer pink (165°F / 74°C), about 11 to 12 minutes, turning once halfway through.

Melt half of the prepared cowboy butter.

Drizzle the melted butter over the cooked chicken skewers to coat thoroughly.

Serve the skewers immediately with the remaining cowboy butter on the side.
Notes
The cowboy butter can be made ahead of time and stored in the refrigerator. If using wooden skewers, remember to soak them in water for 30 minutes before threading to prevent burning on the grill.
