Ingredients
- 1 cup Plain Greek yogurt (Unsweetened; use 2 parts relative to the mayonnaise)
- 0.5 cup Mayonnaise (Use 1 part relative to the yogurt)
- 0.5 Lemon (Zest and juice)
- 1 diente Garlic (Grated, medium-sized)
- Fresh mint (Finely chopped, to taste)
- Fresh milk (As needed to achieve the desired consistency)
- Salt (To taste for seasoning adjustment)
Steps
- 1
In a measuring cup suitable for an immersion blender, add the two parts of plain Greek yogurt.
- 2
Add the part of mayonnaise to the cup with the yogurt.
- 3
Add the zest and juice of half a lemon to help emulsify the mixture.
- 4
Add the grated garlic clove and the previously finely chopped fresh mint.
- 5
Pour a bit of fresh milk into the cup. The milk is essential for giving it a fluid texture ideal for serving.
- 6
Process all the ingredients with the immersion blender until the mixture is well integrated, emulsified, and the mint and zest are finely blended.
- 7
Evaluate the consistency. If you prefer a thinner sauce, add a little more milk and process briefly again.
- 8
Taste the sauce and add salt to taste.
- 9
Transfer the sauce to a squeeze bottle or jar. If necessary, adjust the salt again, cover, and shake vigorously.
- 10
Place the sauce in the refrigerator and let it rest for 20 to 30 minutes so the flavors can settle and integrate perfectly before serving.
Notes
Author suggested variations: you can personalize the sauce by adding tahini, cilantro, or spices like Baharat (a Middle Eastern spice blend). It is excellent not just for shawarma, but also for meat tacos or as a salad dressing.
