Mango Sticky Rice (Not Too Sweet)
A classic Thai dessert featuring glutinous rice infused with salted coconut milk, served with fresh mango and a thickened coconut glaze. It achieves the ultimate Asian dessert compliment: 'not too sweet.'

Ingredients
- 1.5 cup glutinous rice (also labeled as sweet rice or sticky rice; rinsed)
- 2 cup water (for cooking the rice)
- 1 can coconut milk (approx. 13.5 oz; Chaokoh brand recommended)
- 0.5 cup sugar (granulated)
- salt (a little, to taste)
- 1 tsp cornstarch (mixed with a little water to make a slurry)
- 2 mango (ripe, sliced into fans)
- toasted sesame seeds (for garnish)

Rinse 1.5 cups of glutinous rice thoroughly under cold water until the water runs clear.

Place the rinsed rice into a rice cooker and add 2 cups of water. Set the rice cooker to the 'cook' setting and let it finish.

While the rice is cooking, prepare the coconut sauce. In a small saucepan, combine one can of coconut milk, 0.5 cup of sugar, and a pinch of salt.

Heat the coconut milk mixture over medium-low heat, stirring constantly, until the sugar is completely dissolved.

Reserve 1 cup of the warm coconut milk mixture in a separate bowl to be used for the rice.

To the remaining coconut milk in the saucepan, add a cornstarch slurry (cornstarch mixed with a small amount of water). Continue to heat and stir until the sauce thickens into a glaze consistency.

Peel and slice the fresh mangoes into thin fans or wedges while the rice finishes.

Once the rice is done and still very hot, transfer it to a bowl and pour the reserved 1 cup of coconut milk mixture over it.

Mix the rice and liquid together; as you mix, the rice will absorb the liquid and become a beautiful sticky consistency.

To serve, place a mound of the sticky rice on a plate, arrange mango slices on the side, and pour the thickened coconut glaze over the rice.

Garnish with toasted sesame seeds if desired.
Notes
Traditional recipes use a bamboo steamer, but a rice cooker is a convenient shortcut. The 'finger trick' for water level doesn't apply here; glutinous rice requires a specific 1:1.33 ratio (1.5 cups rice to 2 cups water).
