Parmesan Garlic Chicken with Tortellini and Veggies

Ingredients
- 1 lb chicken breast (cut into bite-sized pieces)
- 19 oz frozen cheese tortellini (one bag)
- 1 head broccoli (cut into small florets)
- 1 zucchini (sliced into half-moons)
- 2 tbsp olive oil (for the griddle)
- salt (to taste)
- pepper (to taste)
- garlic powder (to taste)
- onion powder (to taste)
- 0.5 cup Buffalo Wild Wings Parmesan Garlic Sauce (or similar brand)
- 0.25 cup shredded parmesan cheese (for garnish)
- 0.25 cup water (for steaming on the griddle)

Preheat your outdoor griddle to medium-high heat and apply a thin layer of olive oil.

Place the bite-sized chicken pieces on one side of the griddle. Season with salt, pepper, garlic powder, and onion powder to taste.

Place the broccoli and zucchini on the other side of the griddle. Season with salt, pepper, garlic powder, and onion powder.

Add the frozen cheese tortellini to the griddle next to the vegetables.

Squirt about 1/4 cup of water over the tortellini and vegetables, then immediately cover them with a griddle dome or large lid to steam for about 5 minutes.

Remove the dome and toss the chicken, ensuring it is cooked through to an internal temperature of 165°F (74°C).

Combine the chicken, vegetables, and tortellini together on the griddle surface.

Pour approximately 1/2 cup of Parmesan Garlic sauce over the mixture and toss well to coat everything evenly.

Remove from the heat and garnish with shredded parmesan cheese before serving.
Notes
If you don't have an outdoor griddle, this can be made in a large skillet or two on the stove. Use a lid to steam the tortellini and veggies with a splash of water just as you would on the griddle.
