Low Carb Cabbage Lasagna

Ingredients
- 1 green cabbage (head, quartered and cored)
- 15 oz ricotta cheese
- 0.5 cup parmesan cheese (grated, plus more for topping)
- 1 egg (beaten)
- 1 tbsp fresh parsley (chopped)
- 1 lb ground beef
- salt (to taste)
- 1 tsp Italian seasoning
- 1 onion (chopped)
- 24 oz marinara sauce (low-carb or sugar-free)
- 1.5 cup mozzarella cheese (shredded)

Preheat your oven to 375°F (190°C).

Quarter a head of cabbage and cut out the core at a diagonal to make the leaves more uniform.

Boil the cabbage wedges in a large pot of water for about 5 minutes until they start to get tender.

Transfer the cabbage to a colander to drain the excess water and set aside.

In a medium bowl, combine the ricotta cheese, 1/2 cup grated parmesan, 1 beaten egg, and 1 tablespoon of freshly chopped parsley. Mix well until fully combined.

In a large skillet over medium-high heat, brown the ground beef. Season with salt and Italian seasoning.

Add the chopped onions to the skillet and sauté for a few minutes until the onions start to soften.

Pour in the marinara sauce, lower the heat, and let the meat sauce simmer for about 10 minutes.

To assemble, spread a base layer of meat sauce in the bottom of a 9x13 inch baking dish.

Add a layer of the boiled cabbage leaves over the sauce, followed by a layer of the ricotta cheese mixture.

Repeat the layers (sauce, cabbage, ricotta) one more time.

Add a final layer of meat sauce on top.

Sprinkle with additional grated parmesan and a generous layer of shredded mozzarella cheese.

Notes
Ensure the cabbage is well-drained before layering to prevent the lasagna from becoming watery. If the cabbage leaves are very thick, you can pat them dry with paper towels.
