Ingredients
- 2 cup cherry tomatoes (sweet, for roasting)
- 3 tbsp extra virgin olive oil (divided)
- 4 garlic (cloves, minced)
- 1 lb large shrimp (peeled and deveined)
- 8 oz burrata cheese (one large ball or two small balls)
- 0.25 cup fresh basil (torn or chiffonade)
- 1 baguette (sliced for garlic bread)
- salt and black pepper (to taste)
Steps
- 1
Preheat your oven to 400°F (200°C).
- 2
In a baking dish, toss the cherry tomatoes with 2 tablespoons of olive oil, half of the minced garlic, salt, and pepper. Roast for 15-20 minutes until the tomatoes are blistered and bursting.
- 3
While the tomatoes roast, prepare the garlic bread by brushing baguette slices with olive oil and garlic, then toasting until crispy.
- 4
In a skillet over medium-high heat, sauté the shrimp with the remaining garlic and a splash of olive oil until pink and opaque, about 2-3 minutes per side.
- 5
Remove the baking dish from the oven. Place the burrata cheese in the center of the roasted tomatoes and break it open slightly to let the creamy center flow out.
- 6
Arrange the cooked shrimp around the burrata and tomatoes.
- 7
Garnish with fresh basil and serve immediately with the crispy garlic bread for scooping.
Notes
For the best flavor, use high-quality extra virgin olive oil and ensure the burrata is at room temperature before serving.
