Ingredients

  • 1 lb potato gnocchi
  • 1 lb chicken breast (cut into bite-sized pieces)
  • 1 onion (small, diced)
  • 2 tbsp tomato paste
  • 4 cloves garlic (minced)
  • 0.25 cup sun-dried tomatoes (with some of the oil)
  • 1 tsp oregano
  • 1 tsp Italian seasoning
  • salt (to taste)
  • black pepper (to taste)
  • paprika (to taste)
  • garlic powder (to taste)
  • 1 cup chicken broth
  • 0.5 cup heavy cream
  • 5.2 oz Boursin Garlic & Fine Herbs cheese (1 block)
  • 0.5 cup Parmesan cheese (freshly grated, plus extra for serving)
  • 2 cups fresh spinach
  • olive oil (for drizzling)

Steps

    Bring a large pot of salted water to a boil and cook the gnocchi according to the package directions. Drain and set aside.

    While the gnocchi cooks, season the chicken evenly with salt, pepper, paprika, and garlic powder. Drizzle with a little olive oil and toss to coat.

    Heat a large skillet over medium-high heat with a drizzle of olive oil. Add the chicken and cook until golden brown and cooked through.

    Remove the chicken from the skillet and set aside, reserving any juices.

    In the same skillet, add the diced onion and minced garlic; sauté until softened.

    Add the tomato paste to the skillet.

    Pour in the chicken broth and bring to a gentle simmer.

    Stir in the sun-dried tomatoes with some of the oil, oregano, and Italian seasoning.

    Reduce the heat to low and add the heavy cream, Boursin cheese, and Parmesan cheese.

    Stir until the cheeses have melted and the sauce is smooth and creamy. Season with additional salt and pepper to taste if needed.

    Return the cooked chicken and any resting juices to the skillet, then add the cooked gnocchi and fresh spinach.

Notes

The sauce will thicken significantly during the 3-5 minute resting period. For a true one-pan version, some users suggest cooking the gnocchi directly in the sauce for 3-4 minutes instead of boiling separately.
