  • 1 lb boneless, skinless chicken thighs (Cut into bite-sized pieces.)
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 1 tsp kosher salt

  • 1 tbsp butter

  • 1.5 cups heavy cream

  • 1 cup mozzarella cheese (Shredded and divided.)

Bake for about 5 minutes, just until the slices are lightly crisp but not deeply browned. Remove the baking sheet from the oven and gently press down the center of each slice with the back of a spoon to create a shallow pocket for the topping.

    While the toast is in the oven, heat the avocado or olive oil in a large skillet over medium-high heat. Add the bite-sized chicken pieces, then season them with the garlic powder, Italian seasoning, kosher salt, and black pepper. Cook for 6–8 minutes, stirring occasionally, until the chicken is browned on the outside and cooked through to an internal temperature of 165°F (74°C). Transfer the chicken to a plate.

    Reduce the skillet heat to medium and add the butter. Allow it to melt completely without letting it brown.
