Super Creamy 3-Ingredient Caramel
Smooth, glossy, and very creamy caramel made with sugar, heavy cream, and butter. It is ideal for filling or topping cakes, layer cakes, and other desserts; after cooling, it develops a thick and spreadable texture.

Ingredients
- 250 g Sugar (Divided into 3 batches for better control over the caramelization.)
- 250 g Heavy cream (Be careful when adding it, as the caramel will produce splashes and steam.)
- 200 g Butter (Placed in a heatproof bowl or container before pouring in the hot caramel.)

Place the butter in a heatproof bowl or container and set it aside, ready to receive the hot caramel.

Place a heavy-bottomed saucepan over medium heat. Add approximately one-third of the sugar and let it begin to melt without stirring too much, until a golden caramel forms.

Add the second batch of sugar when the first batch begins to melt. Continue cooking, watching closely, until the sugar has melted and the color is uniformly amber.

Add the final third of the sugar and cook until everything is completely melted. The caramel should be golden and fragrant, but not too dark or burnt.

Turn off the heat. Add the heavy cream very carefully and gradually, keeping your face and hands away from the saucepan, as the caramel will react vigorously and release steam and splashes.

Return the saucepan to medium-low heat and stir continuously until the caramel becomes smooth again and thickens slightly, with no sugar lumps remaining.

Pour the hot caramel over the butter. Stir until the butter has melted completely and the mixture is smooth, glossy, and homogeneous.

Allow the mixture to cool slightly, then refrigerate it until it reaches a thick and very creamy texture. The time will depend on the container and the refrigerator temperature; it may take approximately 1 hour.

Notes
The caramel will be extremely hot when the cream is added; use a deep saucepan and work carefully to avoid burns. The texture becomes thicker as it cools. If it becomes too firm in the refrigerator, let it sit at room temperature for a few minutes before using.
