Ingredients

  • 1 brioche bread loaf (sliced into thick pieces)
  • 1 cup heavy cream
  • 0.5 cup 2% milk
  • 0.33 cup dark brown sugar
  • 1 tsp vanilla extract
  • 1 tsp cinnadust (cinnamon sugar blend)
  • 0.5 tsp nutmeg
  • 1 tsp cinnamon
  • 2 eggs
  • 1 oz cream cheese (8oz block, softened)
  • 1 lemon (juiced and zested)
  • 0.33 cup powdered sugar

Steps

    In a medium mixing bowl, combine the softened 8oz block of cream cheese, the juice and zest of one lemon, and 1/3 cup of powdered sugar. Whisk or beat until the filling is smooth and well combined.

    Slice the brioche bread loaf into thick slices. Cut a slit into the top or side of each slice to create a pocket for the filling, being careful not to cut all the way through.

    Pipe or spoon the lemon cream cheese filling into the pockets of the brioche slices until generously stuffed.

    In a separate shallow dish, prepare the custard by whisking together 1 cup heavy cream, 1/2 cup 2% milk, 1/3 cup dark brown sugar, 1 tsp vanilla extract, 1 tsp cinnadust, 1/2 tsp nutmeg, 1 tsp cinnamon, and 2 eggs until fully incorporated.

    Dip each stuffed brioche slice into the custard mixture, allowing it to soak for a few seconds on each side to ensure the bread absorbs the liquid.

    Heat a buttered skillet or griddle over medium heat. Place the soaked bread onto the skillet and cook for 3-4 minutes per side, or until the exterior is golden brown and crispy.

Notes

For the best results, use day-old brioche bread as it holds the custard better without becoming soggy. Ensure the cream cheese is at room temperature before mixing the filling to avoid lumps.
