Homemade Twix Bars
A healthier, gluten-free take on the classic Twix bar featuring a crunchy almond flour shortbread, a creamy peanut butter caramel with pecans, and a dark chocolate topping.

Ingredients
- 1.5 cup almond flour
- 3 tbsp coconut oil (melted and cooled)
- 2 tbsp maple syrup
- 1 tsp vanilla extract
- 0.5 cup creamy peanut butter
- 2 tbsp coconut oil (melted)
- 0.33 cup maple syrup
- 1 tsp vanilla extract
- 0.5 cup chopped pecans (optional)
- 1 cup dark chocolate chips
- 2 tsp coconut oil

Preheat the oven to 350°F (175°C) and line a loaf pan with parchment paper.

In a small bowl, combine almond flour, 3 tbsp melted and cooled coconut oil, 2 tbsp maple syrup, and 1 tsp vanilla extract until a dough forms.

Press the dough evenly into the prepared loaf pan.

Bake for 18-20 minutes or until the edges are lightly golden brown.

Remove from the oven and allow the shortbread to cool while preparing the caramel layer.

In a small bowl, stir together 2 tbsp melted coconut oil, peanut butter, 1/3 cup maple syrup, 1 tsp vanilla, and chopped pecans until smooth and well combined.

Spread the caramel mixture evenly over the cooled shortbread.

Place the pan in the freezer for about 30 minutes to firm up.

Add the dark chocolate chips and 2 tsp coconut oil to a microwave-safe bowl.

Microwave in 30-second intervals, stirring between each until melted and smooth.

Pour the melted chocolate over the caramel layer and spread evenly with a spatula.

Return the pan to the freezer for 15-30 minutes or until the chocolate has set.

Lift the bars out of the pan using the parchment paper, slice into 10 individual bars and enjoy!
Notes
Store leftovers in an airtight container in the fridge. The pecans are optional but recommended for extra crunch.
