Ingredients

  • 12 oz smoked turkey sausage (sliced into rounds)
  • 1 cup cherry tomatoes (sliced in half)
  • 1 bell pepper (any color, chopped)
  • 0.5 white onion (sliced)
  • 2 package gnocchi (shelf-stable or refrigerated, do not pre-cook; approx. 16 oz each)
  • 2 tbsp olive oil (for drizzling)
  • 1 tsp Italian seasoning
  • 0.5 tsp garlic and herb seasoning (a dash)
  • salt (to taste)
  • black pepper (to taste)
  • 0.5 cup shredded mozzarella cheese (a little bit for topping)
  • 1 cup plain Greek yogurt (can substitute with sour cream)
  • 2 tbsp ranch dressing mix (dry seasoning or prepared dressing)
  • 0.5 tsp garlic powder
  • 1 tbsp fresh parsley (chopped)
  • 1 tbsp milk (a splash to thin the sauce)

Steps

    Preheat your oven to 425°F (220°C).

    Slice the smoked turkey sausage into rounds and spread them out evenly on a large baking sheet.

    Slice the cherry tomatoes in half, chop the bell pepper into bite-sized pieces, and slice half of a white onion.

    Add the prepared tomatoes, peppers, and onions to the baking sheet.

    Add two packages of gnocchi directly to the sheet pan. Note: You do not need to boil or cook the gnocchi beforehand.

    Drizzle the ingredients with olive oil and season with Italian seasoning, garlic and herb seasoning, salt, and pepper.

    Toss everything together on the pan to ensure an even coating of oil and spices, then spread back into a single layer.

    Bake in the preheated oven at 425°F for 25 minutes.

    After 25 minutes, remove the pan from the oven and mix the ingredients well.

    Sprinkle a little bit of shredded mozzarella cheese over the top and return to the oven for about 5 more minutes until the cheese is melted.

    While the pan finishes baking, prepare the sauce: In a small bowl, combine a container of plain Greek yogurt (or sour cream), a few tablespoons of ranch, garlic powder, and fresh chopped parsley.

    Add a splash of milk to the sauce and mix well until it reaches your desired consistency for drizzling.

    Drizzle the creamy ranch sauce over the sheet pan dinner before serving.

Notes

Using Greek yogurt instead of sour cream in the sauce increases the protein content. You can use any color of bell pepper you prefer.
