Weights are estimates. Together, the ingredients weigh about 1.25 kg before cooking, which is about 210 g per serving.

Steps

  1. Add the chicken thighs, olive oil, chipotle adobo paste, chili powder, minced garlic, salt, coriander, oregano, black pepper, and cumin to a large bowl.

  2. Mix thoroughly until the chicken is evenly coated in the marinade. If desired, cover and refrigerate the marinated chicken overnight or from the morning until cooking time; this resting period is optional.

  3. Heat a cast-iron skillet over medium-high heat. Once the skillet is hot, add a drizzle of vegetable oil.

  4. Add the marinated chicken to the skillet without crowding the pieces. Cook in two batches if needed.

  5. Cook until the first side is golden brown, about 5 to 6 minutes, then flip the chicken.

  6. Cook the second side until golden brown, about 6 minutes.

  7. Add about 1/4 cup water to the skillet and scrape the bottom to loosen the crispy, flavorful browned bits.

  8. Reduce the heat to low and cook for 1 to 2 more minutes, or until the chicken is cooked through to the center.

  9. Remove the chicken from the skillet and let it cool slightly for 5 minutes.

  10. Chop the chicken into small pieces.

  11. Pour some of the juices from the pan back over the chopped chicken for extra flavor. If desired, add chopped cilantro and mix.

  12. Serve over rice, in tacos, or in a salad.

Notes

For meal prep, store leftovers in an airtight container in the refrigerator for 3 to 4 days. The author notes that chicken breast can be substituted, although chicken thighs provide the more authentic and juicy result. The recipe does not specify an internal cooking temperature; cook until the chicken is cooked through to the center.
