Ingredients

  • 175 g Dried pasta
  • Cherry tomatoes (About 10 tomatoes; estimated at approximately 150 g)
  • 0.5 Red onion (Diced; estimated as half of a medium onion)
  • Fresh basil (A handful)
  • 1 tbsp Dried oregano
  • 4 Garlic (Cloves, minced)
  • 1 tsp Chili flakes
  • 0.5 tin Chopped tomatoes (Half a tin; tin size not specified, estimated as approximately 200 g)
  • 100 ml Double cream
  • 400 ml Chicken bone broth or vegetable stock (Use chicken bone broth, or make 400 ml vegetable stock with a vegetable stock cube and water)
  • Salt and black pepper (A big pinch, or to taste)
  • Parmesan (Grated, for garnish)
  • Fresh parsley (Chopped, for garnish)
  • Fresh basil (For garnish)
  • Chili flakes (For garnish)

Steps

  1. 1

Add the dried pasta, cherry tomatoes, diced red onion, handful of basil, dried oregano, minced garlic, chili flakes, chopped tomatoes, double cream, chicken bone broth or prepared vegetable stock, salt, and black pepper to a large pan. Keep the ingredients in the pan together rather than cooking them separately.

  2. 2

Cover the pan with a lid and bring the mixture to a medium simmer. Cook until the pasta is tender, stirring every few minutes so the pasta cooks evenly and does not stick to the bottom of the pan. This should take about 8–10 minutes, depending on the pasta shape.

  3. 3

Remove the lid and continue simmering until the sauce reaches your desired consistency. Stir regularly; the sauce should become creamy and coat the pasta rather than remain watery.

  4. 4

Divide the pasta between serving bowls and garnish with grated Parmesan, chopped parsley, fresh basil, and additional chili flakes. Serve immediately.

Notes

The source specifies chicken bone broth or vegetable stock made with a stock cube and water. Adjust the final uncovered simmer to make the sauce thicker or looser according to preference. The stated timing is approximately 15 minutes, but pasta cooking time varies by shape.
