Strawberry Blondies with White Chocolate

Ingredients
- 200 g Strawberries (fresh)
- 2 Egg (size L)
- 150 g white chocolate (broken into pieces)
- 8 g vanilla sugar (equivalent to approx. 1 packet)
- 200 g all-purpose flour, type 405
- 0.5 TL baking powder
- 60 g sugar
- 1 Prise salt
- 180 g butter

Preheat the oven to 180 °C fan (recommended) or 200 °C top and bottom heat.

Break the white chocolate into pieces and melt slowly with the butter over a hot water bath. Keep the mixture warm.

In a separate bowl, beat the eggs with the sugar, vanilla sugar, and a pinch of salt until frothy.

Carefully stir the melted chocolate-butter mixture into the egg mixture.

Mix the flour with the baking powder and briefly fold into the batter until just combined into a homogeneous batter.

Wash, hull, and cut the strawberries into small pieces. Carefully fold about two-thirds of the strawberries into the batter.

Pour the batter into a prepared (greased or lined with parchment paper) baking pan and smooth it out. Distribute the remaining strawberry pieces on top.

Bake in the preheated oven for approx. 20-25 minutes until the blondies are golden brown, but remain slightly moist in the center. Allow to cool completely before slicing.
Notes
For a particularly intense aroma, you can add some lemon zest to the batter. The baking time varies depending on the pan size; perform a toothpick test.
