  • 2 eggs (plus 1 egg white)

  • 0.25 cup Greek yogurt
  • 110 g fresh blueberries (average of 100-120g; tossed in 1 tsp flour)
  • 200 g blueberries (for jam)
  • 50 g sugar (for jam)
  • 0.5 lime juice (for jam)
  • 1.5 tsp cornstarch (for jam)
  • 100 g cream cheese (room temperature)
  • 1.5 tbsp honey
  • 1 egg yolk
  • 1 tsp cornstarch (for filling)
  • 2 tbsp heavy cream (cold)
  • 0.5 tsp vanilla extract (for filling)
  • 30 g cold butter (for crumble)
  • 40 g flour (for crumble)
  • 30 g brown sugar (for crumble)
  • salt (a pinch for crumble)
  • 0.5 tsp cinnamon (optional)

Steps

    Prepare the jam: Combine 200g blueberries, 50g sugar, lime juice, and 1.5 tsp cornstarch in a saucepan. Cook over medium heat for 5–8 minutes until thick and glossy. Cool completely.

    Prepare the filling: Beat cream cheese, honey, egg yolk, 1 tsp cornstarch, heavy cream, and 0.5 tsp vanilla until smooth. Chill for 10–15 minutes, then transfer to a piping bag with a round tip.

    Prepare the crumble: Mix 30g cold butter, 40g flour, 30g brown sugar, salt, and optional cinnamon until coarse crumbs form. Chill until ready to use.

    Prepare the batter: Whisk together wet and dry ingredients, then gently fold in the flour-tossed blueberries.

    Preheat oven to 350°F (180°C). Fill muffin cavities about 3/4 full with batter.

Notes
