Ingredients
- 4 Rice paper (several sheets, enough for desired number of daifuku)
- 1 cup Greek yogurt (can use honey-flavored yogurt or plain Greek yogurt)
- 1 tbsp Honey (to taste, for sweetening the yogurt)
- 1 cup Fresh fruit (diced; author recommends dragon fruit, kiwi, or mango)
- Cornstarch (for dusting to prevent sticking)
Steps
- 1
Prepare the yogurt filling by mixing Greek yogurt with a bit of honey to taste for added sweetness.
- 2
Wash and dice your favorite fruits (such as dragon fruit) into small, bite-sized pieces.
- 3
Briefly dip a sheet of rice paper into water to soften it, then lay it flat on a clean surface or container.
- 4
Place a portion of the diced fruit in the center of the rice paper.
- 5
Drizzle a generous spoonful of the honey-sweetened Greek yogurt over the fruit.
- 6
Carefully fold the four sides of the rice paper inward to fully enclose the fruit and yogurt filling, forming a plump, round parcel.
- 7
Lightly dust the outside of the daifuku with cornstarch to prevent it from sticking to surfaces or other pieces.
- 8
Place the assembled daifuku in the freezer for approximately 1 hour.
- 9
Serve immediately after freezing for an ice cream-like texture, or let it thaw slightly for a soft and chewy 'mochi' texture.
Notes
The author notes that dragon fruit is particularly sweet and juicy for this recipe. If you use pre-sweetened honey yogurt, you can skip adding extra honey.
