Ingredients

  • 500 g lean rump steak (thinly sliced)
  • 1 onion (large, sliced)
  • 5 spring onions (cut into 5cm pieces)
  • 4 garlic cloves (minced)
  • 2 tsp fresh ginger (grated)
  • 1.5 dried chillies (optional, 1-2 chillies)
  • 1 tbsp cornflour (also known as cornstarch)
  • 0.25 tsp baking soda
  • 1 tbsp Shaoxing wine (or dry sherry)
  • 1 tbsp light soy sauce (for marinade)
  • 1 tsp dark soy sauce (for marinade)
  • 0.25 tsp white pepper (for marinade)
  • 1 tbsp oyster sauce
  • 2 tbsp light soy sauce (for sauce)
  • 1 tsp dark soy sauce (for sauce)
  • 1 tbsp sweetener
  • 0.33 cup water
  • 1 tsp chicken stock powder
  • 1 tsp sesame oil
  • 0.5 tsp white pepper (for sauce)
  • olive oil spray (for coating the pan)
  • 2 cup cooked jasmine rice (1/2 cup per serve)

Steps

    Combine the thinly sliced beef in a bowl with the cornflour, baking soda, Shaoxing wine, light soy sauce, dark soy sauce, and white pepper. Leave to marinate for 15-20 minutes.

    In a separate small bowl, whisk together the oyster sauce, light soy sauce, dark soy sauce, sweetener, water, chicken stock powder, sesame oil, and white pepper until well combined.

    Heat a large non-stick wok or frying pan over high heat and lightly coat with olive oil spray.

    Cook the beef in two batches for 2-3 minutes until nicely browned. Remove the beef from the pan and set aside.

    Spray the pan again with olive oil and cook the sliced onion for 2-3 minutes until softened.

    Add the minced garlic, grated ginger, and dried chilli (if using) to the pan and cook for 30 seconds until fragrant.

    Pour in the prepared sauce mixture and simmer for 1-2 minutes until it begins to thicken.

    Return the browned beef to the pan and toss thoroughly until everything is evenly coated in the sauce.

    Stir through the spring onion pieces and cook for another minute.

    Divide the mixture between four bowls and serve each with 1/2 cup of cooked jasmine rice.

Notes

The baking soda in the marinade acts as a tenderizer for the beef (velveting). For best results, ensure the beef is sliced very thinly against the grain.
