Crispy Rice Paper Toast with Avocado and Egg

A flour-free and gluten-free toast made with rice paper soaked in egg, folded, and browned until very crispy. It is finished with creamy avocado and a fried egg, making it ideal for breakfast, brunch, or a light dinner.

Ingredients

  • 1 Rice paper (One large sheet for spring rolls; it is soaked in the egg.)
  • 1 Egg for soaking the rice paper (Beaten.)
  • Sesame seeds (Optional, to taste.)
  • Extra-virgin olive oil (For oiling the grill plate and lightly brushing or drizzling over the top of the rice paper.)
  • 0.5 Avocado (For serving; approximately half a medium avocado.)
  • 1 Egg for serving (Pan-fried. Although the original list indicates one egg, the preparation also adds an egg as an accompaniment; a total of two eggs is therefore considered.)

    Beat the egg intended for soaking the rice paper in a wide, shallow dish large enough to hold the sheet.

    Dip the rice paper in the beaten egg for approximately 10 seconds on each side, until it softens and becomes flexible, but do not let it tear.

    Place the soaked rice paper on a clean board. Fold the sides inward to form a compact square or rectangle.

    Sprinkle sesame seeds on top, if using, gently pressing them so they adhere to the damp paper.

    Heat a grill or sandwich maker and lightly grease the lower plate with extra-virgin olive oil. Place the rice paper piece on top.

    Add a little more extra-virgin olive oil over the top of the rice paper. Close the grill and cook for about 5 minutes, until the toast is golden, firm, and very crispy.

    Alternatively, cook it in the air fryer at 180 °C for about 10 minutes; it will puff up more. You can also prepare it in a frying pan or in the oven at 180 °C for approximately 15 minutes, watching it until it is crispy and golden.

    While the toast is cooking, fry the second egg in a lightly greased frying pan until the white is set and the yolk reaches your preferred doneness.

    Serve the crispy toast with the avocado and fried egg on top or alongside. Enjoy immediately to preserve its crispy texture.

Notes

The original recipe lists one egg, but the preparation calls for soaking the rice paper with one egg and serving it with another fried egg; therefore, two eggs in total have been included. No quantity is specified for the oil or sesame seeds in the source. The time and temperature depend on the method: grill, 5 minutes; air fryer, 180 °C for 10 minutes; frying pan or oven, 180 °C for about 15 minutes.
