Crispy Rice Paper Toast with Avocado and Egg

A gluten-free toast made with rice paper hydrated in egg, folded, and cooked until very crispy. It is served with creamy avocado and a fried egg, and can be prepared on a grill, in an air fryer, in a frying pan, or in the oven.

Ingredients

  • 1 Rice paper (Hydrated in the egg and folded into a square)
  • 1 Egg for hydrating the rice paper (Beaten)
  • Sesame seeds (Optional, to taste)
  • Extra-virgin olive oil (For greasing the grill base and brushing or spraying the top of the rice paper)
  • 0.5 Avocado (For serving; estimated amount, approximately half a medium avocado)
  • 1 Egg for frying (To serve on top of or alongside the toast)

    Crack an egg into a bowl and beat it until the white and yolk are well combined.

    Place the rice paper in the beaten egg and let it hydrate for approximately 10 seconds on each side. It should soften enough to fold without falling apart.

    Place the hydrated rice paper on a clean board or work surface and fold it into a square.

    Sprinkle sesame seeds over the top, if using.

    Heat the grill and add a little extra-virgin olive oil to the base. Place the rice paper on top and add a little oil to its surface as well.

    Close the grill and cook the toast for about 5 minutes, until golden and very crispy.

    Alternatively, cook it in the air fryer at 180 °C for about 10 minutes; it will be somewhat more puffed. You can also cook it in a frying pan or in the oven at 180 °C for approximately 15 minutes, watching it until crispy.

    While the toast is cooking, slice the avocado and fry the second egg in a frying pan with a few drops of oil, until the white is set and the yolk reaches the desired doneness.

    Serve the crispy toast with the avocado and fried egg. Eat immediately to best enjoy its texture.

Notes

The publication lists one egg for hydrating the rice paper and then indicates that it is served with another fried egg; therefore, 2 eggs in total have been counted. The oil and sesame seeds are listed without exact quantities, so estimates were used solely to calculate the nutrition. The air-fryer option produces a more puffed toast.
