Homemade Satay Sauce
A quick, creamy Indonesian-style peanut sauce made with peanut butter, coconut milk, sweet soy sauce, ginger, and sambal oelek. It is ready in about five minutes and can be loosened with extra milk when reheated.

Ingredients
- 4 tbsp Peanut butter (Large tablespoons; smooth or crunchy, regular or 100% peanut butter)
- 100 ml Whole milk
- 1 tbsp Salted soy sauce (Use salted soy sauce if available)
- 3 tbsp Ginger syrup
- 60 ml Sweet soy sauce (ketjap manis) (Approximately; alternatively use a few generous splashes)
- 125 ml Full-fat coconut milk (Approximately)
- 1 pinch Garlic granules or garlic powder (Alternatively, sauté 1 garlic clove at the beginning; the creator prefers the granules for convenience)
- 1 pinch Ground coriander (ketoembar) (Small pinch)
- 0.5 small lemon Lemon juice (Juice of half a small lemon)
- 1 tsp Fresh ginger (Approximately a thumb-sized piece, grated)
- 2 tsp Sambal oelek (Add to taste for desired heat; the source lists approximately 2 teaspoons)

Add the peanut butter, milk, salted soy sauce, ginger syrup, ketjap manis, coconut milk, garlic granules, ground coriander, lemon juice, and grated ginger to a small saucepan. If using fresh garlic instead of garlic powder, sauté the minced clove briefly in the pan before adding the other ingredients.

Set the saucepan over low to medium-low heat. Stir continuously or very frequently until the peanut butter melts and all the ingredients are thoroughly combined into a smooth sauce.

Add the sambal oelek, starting with less if you prefer a milder sauce. Stir it through and taste so you can adjust the spiciness to your preference.

Simmer gently for a few minutes, stirring often, until the sauce thickens to the desired consistency. Do not let it boil vigorously, as the sauce can become oily or catch on the bottom.

Taste the finished sauce and adjust the seasoning or add more of any ingredient as desired. Serve warm with satay, grilled meat, or other dishes.
Notes
If the sauce becomes too oily or too thick, stir in additional milk or coconut milk. Add extra liquid when reheating the sauce after it has cooled, since it thickens as it stands.
