Ingredients

  • 4 Shiitake mushrooms (sliced)
  • 1 King oyster mushrooms (sliced)
  • 0.25 cup Wood ear mushrooms (rehydrated and sliced)
  • 8 oz Firm tofu (cubed)
  • 2 Green onions (sliced)
  • 1 tbsp Vegetable oil (referred to as food lube)
  • 1 Dried red chili (whole)
  • 4 cup Chicken bone broth
  • 1 tsp Fresh ginger (grated)
  • 1 tbsp Chinese light soy sauce
  • 1 tsp Chinese dark soy sauce
  • 1 tbsp Oyster sauce
  • 1 tsp Chicken powder (bouillon powder)
  • 0.5 tsp Sugar
  • 0.5 tsp White pepper
  • Salt (to taste)
  • 0.5 cup Bamboo shoots (sliced)
  • 2 tbsp Cornstarch (mixed with equal parts water for a slurry)
  • 4 Eggs (whisked with a little water)
  • 2 tbsp White vinegar
  • 1 tsp Sesame oil (referred to as sesame lube)

Steps

    Prepare the vegetables: slice the shiitake, king oyster, and wood ear mushrooms. Cube the tofu and slice the green onions. Set aside.

    Heat a little bit of vegetable oil (food lube) in a large pot over medium heat.

    Add a singular chili to the oil and sauté until the oil is nice and fragrant.

    Discard the chili from the oil once it has infused its flavor.

    Pour in the chicken bone broth and grate in the fresh ginger.

    Season the broth by adding the light soy sauce, dark soy sauce, oyster sauce, chicken powder, sugar, white pepper, and salt.

    Carefully add the cubed tofu, sliced mushrooms, and bamboo shoots to the pot.

    Bring the mixture up to a boil.

    Drizzle in the cornstarch slurry while stirring until the soup is nice and thick.

    In a small bowl, whisk together the four eggs with a little bit of water.

    Slowly drizzle the whisked eggs into the boiling soup while stirring to create egg ribbons.

    Finish the soup by adding the white vinegar and sesame oil. Garnish with sliced green onions before serving.

Notes

The creator emphasizes that the wood ear mushrooms are essential for texture despite their appearance. Adjust the white vinegar at the end to your preferred level of sourness.
