Flourless Banana Bread

Ingredients
- 3 ripe bananas (mashed into a puree)
- 3 eggs
- 1 tsp baking powder
- 1 cup rolled oats or oat flour (if using rolled oats, you can blend them to get a fine flour)
- 1 tsp ground cinnamon (optional, but recommended)
- 1 tsp vanilla extract
- 0.25 cup honey or sweetener (optional, depending on the sweetness of the bananas)
- 0.25 cup chopped walnuts or chocolate chips (optional)

Preheat the oven to 180°C.

Grease a loaf pan with a little vegetable oil or butter, or line it with parchment paper.

In a large bowl or blender, mash the ripe bananas until they form a puree.

Add the eggs, honey (if using), and vanilla extract to the banana puree. Mix well.

Stir in the oats, baking powder, and ground cinnamon into the mixture. Mix until homogeneous.

If desired, add the walnuts or chocolate chips and mix gently with a spatula.

Pour the mixture into the previously greased pan.

Bake for 35 to 40 minutes or until a toothpick inserted into the center comes out clean.

Remove the bread from the oven and let it cool for at least 10 minutes before removing it from the pan.

Notes
If you don't have oat flour, you can blend rolled oats until they reach a fine texture. The sweetness will depend on how ripe the bananas are; if they are very dark, you can omit the honey.
