Slow Cooker Chicken Pot Pie Protein Noodle Bowls

Ingredients
- 4 lb chicken breast
- 3 can 50% reduced sodium cream of chicken soup (approx. 10.5 oz per can)
- 2 cup low sodium chicken bone broth
- 28 oz frozen mixed vegetables (1 bag)
- 29 oz Barilla Protein+ penne (2 boxes, 14.5 oz each)
- 500 g nonfat cottage cheese
- 170 g light cream cheese
- 120 g reduced fat shredded cheddar
- 2 tsp garlic powder
- 2 tsp onion powder
- 1 tbsp dried thyme
- 1 tsp smoked paprika
- 1 tbsp salt
- 1 tsp black pepper
- fresh parsley (for garnish)
- Ritz crackers (crushed, for topping before eating)

Place the 4 lbs of chicken breast into the slow cooker.

Add 3 cans of reduced sodium cream of chicken soup and 2 cups of chicken bone broth to the slow cooker.

Add the garlic powder, onion powder, dried thyme, smoked paprika, salt, and black pepper.

Cover and cook on high for 3-4 hours or on low for 6-7 hours until the chicken is tender and easily shreds.

While the chicken is cooking, prepare the 2 boxes of Barilla Protein+ penne according to the package instructions until al dente. Drain and set aside.

Once the chicken is cooked, remove it from the slow cooker and shred it using two forks.

Add the shredded chicken back into the slow cooker along with the 28oz bag of frozen mixed vegetables.

Stir in the 500g of nonfat cottage cheese, 170g of light cream cheese, and 120g of reduced fat shredded cheddar until the cheeses are melted and the sauce is creamy.

Fold in the cooked penne pasta until well combined and heated through.

Divide the mixture into 12 meal prep containers. Garnish with fresh parsley.

Before serving, top with crushed Ritz crackers for the full pot pie experience.
Notes
For the best texture, add the crushed Ritz crackers only when you are ready to eat to prevent them from getting soggy. This recipe is designed for 12 servings, making it ideal for a full week of high-protein meal prep.
