Healthy Caesar Dressing
A light and nutritious version of the classic Caesar dressing, using Greek yogurt as a base to significantly reduce calories without losing the traditional flavor.

Ingredients
- 125 g Greek yogurt (One standard container; plain and unsweetened)
- 1 tbsp Mustard (Dijon or wholegrain type)
- 20 g Grana Padano or Parmesan cheese (Grated)
- Vinegar (A splash to taste)
- 2 Anchovies (Canned fillets)
- Salt (To taste)
- Black pepper (To taste)

In a small bowl or container, add the plain Greek yogurt.

Add a tablespoon of mustard to the yogurt.

Grate approximately 20 g of Grana Padano or Parmesan cheese and incorporate it into the mixture.

Add a splash of vinegar for acidity.

Finely chop two anchovy fillets and incorporate them (this will give it the authentic Caesar dressing touch).

Season with salt and pepper to taste, being careful with the salt since the anchovies and cheese are already salty.

Mix everything vigorously until you obtain a smooth and creamy dressing.
Notes
This homemade version is much lighter than the commercial one, which can contain up to 342 kcal per 100g. If you prefer a smoother texture, you can blend all the ingredients with a blender. Some users suggest adding a bit of lemon or garlic to enhance the flavor.
