Homemade Ube Piaya
A popular Filipino unleavened flatbread filled with a sweet purple yam (ube) mixture, cooked on a griddle until golden and flaky.

- 1.5 cup water (for the filling)
- 1.5 cup sugar (for the filling)
- 1.5 tbsp margarine (for the filling)
- 250 g ube (purple yam) (boiled and grated)
- ube food coloring (a little for color)
- 1.25 cup bread crumbs (or bread powder (pulbos ng pandesal))
- 2 tbsp sugar (for the dough)
- 0.125 tsp salt (transcript states 1/8 tsp)
- 0.625 cup water (for the dough; combined 1/2 cup and 1/8 cup as stated)
- 0.25 cup cooking oil (for the dough)
- 2 cup all-purpose flour (for the dough)

In a pan over medium heat, combine 1 1/2 cups water, 1 1/2 cups sugar, and 1 1/2 tablespoons margarine. Bring to a boil and simmer until the mixture slightly thickens.

Add 250 grams of boiled and grated ube to the pan. Add a small amount of ube food coloring if desired. Stir continuously until the mixture dries out and thickens into a paste.

Remove the ube mixture from the heat and stir in 1 1/4 cups of bread crumbs (or bread powder) until well combined. Set aside to cool.

In a separate mixing bowl, prepare the dough by combining 2 tablespoons sugar, 1/8 teaspoon salt, 5/8 cup water (1/2 cup + 1/8 cup), and 1/4 cup cooking oil. Mix slightly.

Add 2 cups of all-purpose flour to the liquid mixture. Stir until the dough comes together and is no longer sticky. This dough does not require long kneading.

Divide the dough into equal-sized portions (balls). Divide the ube filling into the same number of portions to ensure even filling.

Take a piece of dough, flatten it slightly, and place a portion of the ube filling in the center. Wrap the dough around the filling and seal it tightly.

Flatten the filled dough balls using a rolling pin (or your hands) until they are thin discs. Prick the surface of each disc with a fork.

Heat a dry pan (no oil needed) over medium-low heat. Place the piaya in the pan and cook until the bottom is golden brown.

Flip and cook the other side until browned and crispy. Serve warm.
Notes
The ube must be boiled before grating. The bread crumbs help stabilize the filling so it isn't too runny. No oil is needed in the pan during the final cooking stage as the dough already contains oil.
