Ingredients
- 2 salmon fillets (4 oz each, skin-on)
- salt (to taste)
- black pepper (to taste)
- 2 tbsp butter
- 3 garlic (minced)
- 0.5 tsp dried oregano
- 0.25 tsp ground thyme
- 0.5 cup vegetable broth
- 0.25 cup heavy cream
- 0.5 cup Parmesan cheese (freshly shaved)
- 0.25 cup sun-dried tomatoes (chopped)
- 1 pinch red pepper flakes (optional)
- fresh parsley (chopped, for garnish)
- lemon juice (optional squeeze for garnish)
Steps
- 1
Pat the salmon fillets dry with paper towels and season both sides with salt and pepper.
- 2
Heat 2 tablespoons of butter in a skillet over medium-high heat until melted and bubbling.
- 3
Place the salmon in the skillet and sear until golden brown and just cooked through, about 3 to 4 minutes per side. Remove the fillets from the pan and set them aside on a plate.
- 4
In the same skillet with the remaining butter and pan drippings, add the minced garlic, dried oregano, and ground thyme. Sauté for about 30 seconds until fragrant.
- 5
Pour in the vegetable broth and heavy cream. Stir in the shaved Parmesan cheese, chopped sun-dried tomatoes, and a pinch of red pepper flakes if using.
- 6
Allow the sauce to simmer until it has slightly thickened, which should take 2 to 3 minutes. Taste the sauce and adjust seasoning with additional salt and black pepper if needed.
- 7
Return the seared salmon fillets to the skillet and spoon the creamy sauce over the top to coat them thoroughly.
- 8
Plate the salmon and garnish with chopped fresh parsley and a squeeze of fresh lemon juice.
