Steps
Wash the red lentils and soak them for 15 minutes. Drain before using.
Chop the sweet potato, onion, garlic, and riced cauliflower.
Heat olive oil in a pot over medium heat.
Add the chopped onion, curry powder, and optional salt. Sauté for 4–5 minutes, until the onion is golden.
Add the garlic, sweet potato, riced cauliflower, and soaked red lentils. Mix well.
Add the crushed tomatoes, full-fat coconut milk, and water. Stir to combine and bring the mixture to a boil.
Cover the pot and cook over medium heat for 25 minutes, checking halfway through to make sure sufficient liquid remains.
Blend the curry to the desired consistency, leaving some texture if preferred.
Serve over rice or with naan. For babies, serve smooth or lightly mashed and thin with water if needed.
Notes
For toddlers, serve as-is or over soft rice or quinoa, with toast or naan strips. Older children and adults may enjoy it with naan, rice, cucumber yogurt, fresh herbs, or lemon. The source does not specify the amount of olive oil or a blending method.
