Ingredients
- 6 oz cream cheese (At room temperature)
- 1 large egg (At room temperature)
- 15.25 oz strawberry cake mix (1 box)
- 1 tsp baking powder
- 0.5 cup vegetable oil
- 0.75 cup white chocolate chips (Optional)
- 1 oz freeze-dried strawberries (Optional)
Steps
- 1
Place the cream cheese, egg, strawberry cake mix, baking powder, and vegetable oil in a large bowl. Mix until the ingredients are combined and a cookie dough forms.
- 2
If using them, fold the white chocolate chips and freeze-dried strawberries into the dough until evenly distributed.
- 3
Cover or otherwise place the dough in the refrigerator to chill for 30 minutes.
- 4
While the dough chills, preheat the oven to 350°F (175°C). Line a large baking sheet with a silicone liner or parchment paper.
- 5
Use a small cookie scoop to portion the chilled dough onto the prepared baking sheet, spacing the scoops 2 inches apart.
- 6
Roll each portion briefly between your hands to make the dough balls even.
- 7
Bake in the preheated oven for about 12–13 minutes.
- 8
Let the cookies cool on the baking sheet for 10 minutes before serving or transferring them.
Notes
If the cream cheese is not at room temperature, microwave it for 20 seconds before mixing.
