Ingredients
- 0.25 cup heavy cream
- 1 egg
- 2 slices dark bread (torn to pieces with crusts discarded)
- 6 tbsp unsalted butter (divided; use 3 tbsp for the onions)
- 1 small onion (finely chopped)
- salt (to taste)
- 0.25 tsp allspice
- 8 oz ground pork
- 8 oz ground beef
- 1 tsp baking powder
- 2 tbsp all-purpose flour
- 1.33 cups chicken broth
- 1 tsp light brown sugar
- 1.5 tsp soy sauce
- 0.5 tsp lemon juice
- 3 tbsp fresh dill or parsley (chopped)

In a small bowl, combine the torn dark bread pieces and heavy cream. Let the bread soak until it has absorbed the liquid and softened.

Melt 3 tablespoons of the unsalted butter in a skillet over medium heat. Add the finely chopped small onion and a pinch of salt. Sauté until the onion is soft, translucent, and buttery.

In a large mixing bowl, combine the ground pork, ground beef, egg, soaked bread mixture, sautéed onions (and their butter), allspice, and baking powder. Mix thoroughly by hand until well combined.

Form the meat mixture into small, uniform meatballs. Place them on a wire rack set over a rimmed baking sheet.

Bake the meatballs in a preheated oven (typically 400°F/200°C) until browned and cooked through, approximately 15-20 minutes.

While the meatballs bake, prepare the gravy. Melt the remaining 3 tablespoons of butter in a skillet over medium heat. Whisk in the 2 tablespoons of all-purpose flour to create a roux and cook for 1-2 minutes until slightly golden.

Slowly whisk in the chicken broth, light brown sugar, soy sauce, and lemon juice. Simmer the sauce, stirring constantly, until it thickens into a smooth gravy.

Once the meatballs are finished, add them to the skillet with the gravy. Toss gently to coat them thoroughly.

Garnish with chopped fresh dill or parsley and serve hot.
Notes
The author recommends being generous with the butter when sautéing the onions (using 3 tbsp) for a juicier, more flavorful meatball. If you prefer a lot of sauce, consider doubling the gravy ingredients (broth, flour, butter, soy sauce, sugar, and lemon juice). This recipe is based on the 'Heroes' Feast' cookbook.
