Simple Apple Yogurt Cake

- 2 apples (large (or 3 small), peeled and chopped; about 2 cups)
- 3 eggs (large)
- 3 tbsp Greek yogurt (heaping; about 1/3 cup)
- 0.5 tsp cinnamon (optional)
- vanilla extract (a little; optional)
- lemon zest (optional)

Preheat the oven to 350°F / 175°C.

Peel and chop the apples into small pieces.

Add the chopped apples to a food processor and pulse until they are very finely chopped, but not completely puréed.

Add the Greek yogurt and eggs (along with optional cinnamon, vanilla, or lemon zest if using) to the food processor.

Blend again just until everything is combined.

Line a small baking pan (a 6-inch pan is recommended) with parchment paper.

Pour the mixture into the prepared baking pan.

Bake for about 40-45 minutes, or until the center is set and the top looks lightly golden.

Remove from the oven and let it cool completely before slicing to allow the pudding-like texture to set.
Notes
This cake has a soft, custard or pudding-like texture rather than a traditional crumb. It is excellent for Baby Led Weaning (BLW) due to its soft texture and natural sweetness.
