- 5.5 garlic cloves (lightly crushed, 5-6 cloves)
- 4 sprigs fresh rosemary (leaves only)
Steps
- 1
Preheat oven to 220°C (425°F). Line a baking tray with parchment paper and set aside.
- 2
Place 500 g water into the Thermomix mixing bowl.
- 3
Place the peeled and quartered potatoes into the Varoma dish, secure the lid, and steam for 15-20 minutes / Varoma / speed 1, or until potatoes are slightly softened but not falling apart.
- 4
Transfer the par-boiled potatoes to the prepared baking tray.
- 5
Drizzle the potatoes with 4 Tbsp vegetable oil.
- 6
Season with coarse sea salt and ground black pepper to taste.
- 7
Add the 5-6 crushed garlic cloves and the leaves from 4 sprigs of fresh rosemary to the tray.
- 8
Toss everything together until the potatoes are well coated in oil and seasonings.
- 9
Roast in the preheated oven for 40-50 minutes (220°C / 425°F), turning occasionally, until the potatoes are golden brown and crispy.
- 10
Serve hot as a side dish.
Notes
For the best results, choose a floury potato variety suitable for roasting. Lightly crushing the garlic allows it to release its oils without burning too quickly in the high oven heat.
