Steps

  1. Preheat the oven to 425°F (220 °C) (218°C (425 °F)). Line a 9-cup muffin tin with paper liners.

  2. In a large bowl, combine the flour, granulated sugar, 2 tablespoons of the brown sugar, baking soda, baking powder, salt, ground ginger, and 1/4 teaspoon of the cinnamon. Mix well.

  3. In a separate bowl, combine the egg, melted and cooled butter, milk, and vanilla extract. Mix well.

  4. Add the wet ingredients to the dry ingredients and mix until combined.

  5. Set aside 3 tablespoons each of the chopped cranberries and chopped apple for the topping.

  6. Fold the remaining cranberries and apple into the batter.

  7. In a small bowl, combine the reserved cranberries and apple with the remaining 1/4 teaspoon cinnamon and 2 tablespoons brown sugar. Mix well to make the topping.

  8. Spoon the batter into the prepared muffin cups, filling each about three-quarters full. Top each muffin with about 1 teaspoon of the reserved fruit mixture.

  9. Bake at 425°F (220 °C) (218°C (425 °F)) for 8 minutes. Reduce the oven temperature to 350°F (180 °C) (176°C (350 °F)) and continue baking for about 10–12 minutes, until the tops are golden brown and a toothpick inserted into the center comes out clean.

  10. Cool the muffins in the pan for 15 minutes before removing them.

Notes

The recipe uses melted butter, which pairs with the cranberries and apple; cinnamon and ground ginger complement both fruits, while vanilla enhances the muffin flavor.
