Creamy Chicken and Spinach Gnocchi

- 1 lb chicken breast (cut into bite-sized pieces)
- 1 tbsp olive oil (for searing chicken)

- black pepper (to taste)
- 16 oz potato gnocchi (shelf-stable or refrigerated)
- 3 garlic (cloves, minced)
- 1 cup heavy cream (or double cream)
- 2 cup baby spinach (fresh, packed)
- 0.25 cup parmesan cheese (grated)

Cut the chicken breast into bite-sized pieces and season generously with salt and black pepper.

Heat olive oil in a large skillet over medium-high heat. Add the chicken pieces in a single layer.

Sear the chicken until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the pan and set aside.

In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant.

Pour in the heavy cream and bring to a gentle simmer, scraping up any browned bits from the bottom of the pan.

Add the gnocchi directly into the simmering cream. Cover and cook for 3-4 minutes, or until the gnocchi are tender.

Notes
If the sauce becomes too thick, you can thin it with a splash of chicken broth or pasta water. For extra flavor, add a pinch of red pepper flakes or nutmeg to the cream sauce.
