Steps

    Preheat your oven to 350 degrees F (175 degrees C).

    Heat oil in a large pan, Dutch oven, or deep-fryer for frying.

    Peel the eggplants and slice them into rounds approximately 1/4-inch thick.

    Coat each side of the eggplant slices thoroughly with the all-purpose flour.

    In a separate bowl, beat the 4 eggs. Dip each floured eggplant slice into the egg to coat both sides.

    Immediately press the egg-coated eggplant into the bread crumbs, ensuring both sides are well-coated.

    Once the oil is hot, place the eggplant slices in the pan and fry until they are golden brown on both sides. If using a deep-fryer, cook for about 2 to 3 minutes.
