Ingredients
- 1.5 cup all-purpose flour
- 3 tbsp sugar
- 1 tbsp baking powder
- salt (A pinch)
- 1.25 cup milk
- 1 egg
- 3 tbsp butter, melted (Melt before mixing)
- 1 tsp vanilla extract
- 1 banana (Slice lengthwise for frying)
- butter for frying banana (A little, as needed)
- strawberries (Optional topping)
- honey (Optional topping)
- cinnamon (Optional dusting)
Steps
- 1
In a large mixing bowl, whisk together the flour, sugar, baking powder, and a pinch of salt until evenly combined and no clumps remain.
- 2
In a separate bowl, whisk the milk, egg, melted butter, and vanilla extract until the mixture is smooth and cohesive.
- 3
Pour the wet mixture into the dry ingredients. Stir gently just until combined; a few small lumps are acceptable. Do not overmix, or the pancakes may become dense.
- 4
Heat a nonstick pan over medium heat. Lightly grease it if needed, then pour in portions of batter sized to the pancakes you want to make.
- 5
Cook each pancake until bubbles form on the surface and the underside is golden, about 2–3 minutes. Flip carefully and cook the second side until golden and cooked through, another 1–2 minutes. Repeat with the remaining batter.
- 6
While the pancakes cook or afterward, heat a little butter in the nonstick pan over medium heat. Add the banana slices and fry until softened and caramelized on both sides, turning carefully.
- 7
Stack the pancakes and top with the caramelized banana. Add strawberries, honey, or a dusting of cinnamon if desired, and serve warm.
Notes
The source does not specify an exact pancake yield; this quantity makes approximately 8–10 medium pancakes. Cook over moderate heat so the centers cook before the outsides become too dark.
