Ingredients

  • 1 sweet potato (medium, halved lengthwise)
  • avocado oil (for brushing)
  • 0.25 tsp smoked paprika
  • salt (to taste, for sweet potato)
  • black pepper (to taste, for sweet potato)
  • 16 oz ribeye steak (cut into bite-sized cubes and patted dry)
  • salt (to taste, for steak)
  • freshly ground black pepper (to taste, for steak)
  • avocado oil spray (for cooking)
  • 1 tbsp salted butter
  • 3 garlic (cloves, minced)
  • 0.5 tbsp fresh parsley (chopped)
  • fresh lemon juice (to taste; optional)
  • 1 bunch broccolini (trimmed)
  • avocado oil (for cooking)
  • salt (to taste, for broccolini)
  • black pepper (to taste, for broccolini)

Steps

  1. 1

Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.

  2. 2

Brush the cut sides of the halved sweet potato with avocado oil. Season with smoked paprika, salt, and black pepper.

  3. 3

Place the sweet potato cut-side down on the prepared baking sheet. Roast for 30–40 minutes, until tender and caramelized.

  4. 4

Pat the steak cubes completely dry if needed, then season with salt and freshly ground black pepper.

  5. 5

Heat a large skillet over high heat and lightly coat it with avocado oil spray.

  6. 6

Add the steak in a single layer, avoiding overcrowding; cook in batches if needed. Sear for 1–2 minutes per side, until deeply browned.

  7. 7

Reduce the heat to low. Add the salted butter and minced garlic, then stir for 30–60 seconds, until fragrant.

  8. 8

Add the trimmed broccolini to the same pan and sear until lightly charred and tender-crisp.

  9. 9

Finish the steak and broccolini with fresh lemon juice, if using, and chopped fresh parsley.

  10. 10

Serve the steak and broccolini alongside the roasted sweet potato.

Notes

The source does not specify an amount of avocado oil for brushing or cooking, or exact quantities for salt, pepper, or lemon juice. The creator recommends drying the steak thoroughly, using a very hot pan, and avoiding overcrowding to achieve a deep sear; add the broccolini after the garlic butter step so it takes on the pan flavors.
