Ingredients

  • 2 eggs
  • 1.5 cup warm water (approximate ratio of 1.5 to 2 times the volume of eggs)
  • salt (a pinch)
  • 1 tbsp cooking oil (for stir-frying pork)
  • 0.25 lb ground pork
  • 1 tsp ginger (minced)
  • 1 clove garlic (minced)
  • 1 tbsp light soy sauce
  • 0.5 tsp dark soy sauce (for color)
  • 1 tsp oyster sauce
  • 1 stalk green onion (chopped for garnish)

    Crack two eggs into a heat-proof steaming bowl and whisk them thoroughly.

    Add warm water to the eggs (roughly 1.5 times the volume of the eggs) along with a pinch of salt. Whisk until well combined.

    Strain the egg mixture through a fine-mesh sieve into another bowl to remove bubbles and ensure a smooth texture.

    Cover the bowl tightly with plastic wrap and poke a few small holes in the top with a toothpick to allow steam to escape.

    Place the bowl in a steamer over boiling water. Steam on medium-low heat for about 10-12 minutes until the custard is set but still has a slight jiggle.

    While the eggs are steaming, heat oil in a wok or skillet over medium-high heat. Add the ground pork and stir-fry until browned and cooked through.

Notes
